Think of it as Christian bible storytelling. There is a story but depending on who is narrating the story slightly alters so it makes sense to the storyteller. Hardcore fnaf fans have a canon story suplemented by game theory and is considered the best interpretation, so some will stick to it while others use plotholes to add to or otherwise twist the story, leading to fan games and the fanverse.

Basically you choose a side and subjectively decide what Scott intended with the story. Scott won't openly say he disawows fan stories. Wendigoon and Matt Pat for example chose the widely accepted and more faitful interpretation of the canon. The story is open ended on purpose because gameplay comes 1st and story is the cherry on top.
