Why does the court keep letting Nick constantly jerk them around. The judges in my state would have lost their patience and forced him to either plea or declare he’s not guilty so the trial can start.
The theory that they're trying to make him snitch on his dealer could make some sense. If they lock him up as-is or give him the stayed sentence now, they'll still have someone out there selling whole ounces of cocaine to people in their county.

Nick might be a retarded queer who can't stop thinking about gay sex with Aaron Imholte, but even he realizes that snitching on his dealer would be a strategic miscalculation.

Wentzell saw this superchat and rescheduled to keep it going. Based.

Based upon what @Tiki Bar Man 2 posted, absolutely nothing happened. He didn't plead. He didn't say he wasn't going to plea. The hearing simply didn't happen.

Everybody got cucked.

I did not anticipate this. Wow.
Much like Chris Chan, Nick's trial will take way too long and then end in a boring way

December is another settlement conference. The judge thinks they can still work it out.

Which means Nick is willing to admit guilt for something, but not enough. Probably insisting the felony gets knocked down to a GM or regular misdemeanor and insisting the other charges go away - or demanding a stay of imposition/ bitching about probation conditions.
Knowing Nick, he probably wants no conditions at all. And they'd be foolish to agree to that.

If they take this to trial, he's fucked. They still can if he decides to push his luck.
