If you're talking about Milwaukee, it's just like any other city, you can find good restaurants catering to most specialties. In the rest of the state, just search for supper clubs. They are old-timey and dumpy and gimmicky, and you will get a slophouse vibe when you walk in, but they are legit. They will fill you up with tasty food & spirits for relatively cheap. If you're going to be in Madison I would especially recommend the Tornado Club.
