So, Nick's been obsessively calculating exactly how many days in jail, how many hours of community service, and how much money Aaron will pay in each scenario he has planned in his head to the point he's missed doing his job because of it. I've been alogging Nick for a while, and even I think this is a bit unnerving.

This isn't some kind of ironclad irrebuttable presumption. The circumstances are entirely relevant. And no, they aren't Kayla is a whore (even though she is), the picture, contrary to being private, was literally taken on stream by Aaron while he was streaming to hundreds if not thousands of people, even if Kayla was off screen.
Assuming that's the relevant photo, SHE did not say hey, take a photo of me for the benefit of your stream audience. That picture was by a lover and of a lover; she was not visible to his audience. They were in his home, and she showed herself to him, not anyone else. Generally speaking, there is a "reasonable expectation of privacy" in non-public and non-commercial settings. if you're in your bedroom getting photos taken by your boyfriend, the fact that there's a news crew outside on your lawn that can't see you through the blinds doesn't mean you don't have a reasonable expectation of privacy about those photos.

So his plan is that if Aaron does approach him in an attempt to confront him about his behaviour, he'll be able to mince behind the obese paedophile in the hope that Porky will provide some cover from the blows that the Pugilist would be raining down on his head (which I think is how this plays out in his fevered homo-erotic court room fantasy.)

Then, after Aaron has beaten him into a pulp, he sweeps him up in his arms, admits, 'It was never Kayla. It was only ever you, Chaos.' And the pair of them ride off into the sunset, Brokeback Mountain style, leaving Kayla to her benzos and Melton to 'take care' of Nick's children (if you know what I mean and I think you do.)
No, it's simpler than that:

Nick thinks that Melton being there will make Aaron suffer more.

Nick's a rage monster now and his #2 priority (#1 is getting high while on probation) is getting revenge on the people that "wronged" (talked about him online) him

He wants Melton there because Melton is Aaron's #1 A-Log. Melton will stream about the trial, which Nick hopes will humiliate and harm Aaron. He also hopes that Melton watching in the gallery will also make Aaron more miserable.

Nick's kid's safety, his wife's honor, the optics, all of those are second to Nick making sure Aaron suffers.

If the Judge suddenly goes '90 days jail' or whatever, can Aaron pull his guilty plea in response to them not honoring the plea deal? My thought had been that he could.

FWIW I think if Aaron gets any actual time that'd be insane, opposed to a larger fine perhaps.

It was both commercial and public. I do not believe the circumstances under which this picture was taken, i.e. during a raunchy shock jock's livestream, would give any remotely reasonable person an expectation of privacy.

The best outcome is the judge just upholds the original deal, and Nick completely flips out, childs the judge, and gets immediately jailed for contempt. Then Melton explodes, spewing child porn all over the courtroom, and his remains are hauled off to be buried under the prison.

That picture they uploaded of Aaron, while not technically pornography, is probably closer in spirit to what RP laws are meant to do than what Aaron actually did. I checked the hearing schedule for Judge Heidi Schultz tomorrow and her whole day is booked in 15 minute increments for various criminal hearings. She isn't going to have time for any nonsense.

Is she even required to let the victim statements be read? Three of those would take the whole 15 minutes.

Maybe she'll delay things til she has more time, rendering Melton's trip entirely pointless.
