The thing I always found annoying in AoT is how everyone knows each other. I don't know if it's the same post time skip but just about every important character is in the same social circle, like you have a threat that is world shattering and everyone important is your family or people you went to school with.

I’m not sure if that’s unique to Attack on Titan. I’m not too upset about that since a lot of this is from Eren’s POV.

That, and because most of the cast was in the same military, so it's not too far of a stretch for the characters to be at least vaguely familiar with each other.

i feel like i missed something. apologies for the live reactions to my first time through the series, but it feels like they got to eren's dad's basement, read the notes, we get a big history lesson, and then next time we see the usual cast eren's personality has taken a total 180 degree turn? what happened? am i missing something?

Nah that's pretty much it. Isayama shit the bed.
 
I don't think to the same extent as other works at that scale. Like even basic bitch shonen will make some degrees of separation between the main character and most of the other cast.
I'm thinking about My Hero Academia where everyone was classmates or part of their school at one point or the other, and there's usually maximum one people connection between any of the characters.

It’s literally a plot point in Season 1 that Eren convinces/inspires everyone he hung out with during boot camp to join the Survey Corps. He didn’t know anyone except Armin and Mikasa before boot camp. There’s plenty of things to complain about Attack on Titan, but the fact that all the main characters know each other is entirely justified by them spending 2-3 years training together off-screen, before all joining the Survey Corps.
 
Honestly I feel things would've been better if Isayama had a break to outline the rest of the story, since he immediately started the timeskip after the ocean chapters.
You can basically say this about almost every single manga ever written. At least the popular ones. Once the publishers and editors start getting massive monthly or even weekly paychecks the quality essentially always nosedives. Especially with these franchises having so much merchandise and licensed junk. There is no time to develop a story or even check for continuity. For mega franchises like Star Wars or Marvel Comics they don't even bother with their continuities contradicting they just make separate universes.

Attack on Titan went from a developing and interesting story to basically "advertising platform for merchandise" and never went back. And it might not even be in the top ten worst offenders for Japanese comic stories. Generally once anything becomes popular now you can expect it to be destroyed before it can finish.
You should be mad that Isayama was utterly incapable of portraying the Rumbling as a bad thing.
If it was established in the story that the Rumbling could be done without devastating the world it would be a potentially optimal strategy or great threat to the world. But the way that the narrative established the Rumbling was that it would entirely annihilate all life that was near it. Which would including its starting point of all of the Walls in the Paradis Island. It would render the world useless for farming and strip the oceans of all life. If Eren completed the Rumbling it would end all life. Which would have been an interesting ending for sure if Eren just took out his anger on the world.

It was like a bad mutually assure destruction allegory for nuclear weapons. Something that comes up in Japanese literature and stories every other minute because of their WWII history. The way that the Rumbling happens is that Eren destroys enough of the world to get people to fear the Titans. The Eldians destroy the Titans (though Eren secretly allows this to happen) so that Eldia can appear as the saviors of the world. This backfires in that Eren goes too far and now people fear the next Rumbling so they kill everyone on Paradis with their remaining arsenal. But the giant centipede survives, grows into a tree, and leaves us with a sequel where the last Eldians can regain Titan powers. You can almost justify the ending in that Eren is a child so his plan backfires spectacularly. It falls on its face when you factor in Paths and how Eren would see through time though and yet still does the dumbest possible thing.
