Fresh eggs ( 48 hours from the birds arse) should be fried hot and fast with nice runny yolk, crispy edges and good firm whites. After 48 hours they're more suited for boiling whether hard or soft or scrambling. There's a very good reason for this, a fresh egg, put in a frying pan, will hold together in a blob and cook nicely but an older egg will run and you'll end up with burnt edges. A fresh egg will not boil properly, the texture won't be nice and the yolks go hard to quickly.
