Cooking with Kat (and DSP) thread

Gonna disagree on it looking edible given the chicken looks a bit horrific and I swear I see blue in it and the skin being in the mash is a mild turn off for me. It's her worst dish IMO, but it's only fairly bad. Phil doesn't deserve a lick of quality anyway given how he essentially brow beat her into being on a video and making her look like a hostage though.

Why just the drumsticks?
They most likely bought a package of a dozen drumsticks. I can tell you are not a real gamer because real gamers have not time for forks and knives when eating chicken. That's as absurd as wasting time waiting for butter to melt.

And homemade mashed potatoes. As opposed to the powdered potatoes that come in a box? Are we supposed to be impressed that Kat can cook a potato and then mash it up? Truly a culinary master.

drumsticks:

honey and ginger should be nice. i suspect it might be a bit overbearing on the sweetness with only those ingredients, so i hope that it was cut with a bit of citrus. the sesame seeds are a nice touch, but if you really want them to give some flavor to your dish you should blitz them in a food processor for a second or at smash them up and use less. they benefit a lot from that.

i'm a bit puzzled as to the color of the chicken. a honey marinade that the chicken was basted in throughout would burn if it was of any sort of thickness or viscosity. this seems like it must have been rather thin though, and she didn't baste the drumsticks throughout the baking process.

my view is only use a liquid marinade when you're grilling so you can constantly baste the meat and develop a coat for it. otherwise, you might as well just cook it only lightly seasoned and then make a sauce on the side.

it appears the bones of the chicken are burnt, though the outside is not. the chicken must be very dry, especially since it doesnt look like there was much skin to keep the moisture in. maybe she removed it for health reasons, but then again if you're concerned about health you probably wouldnt be eating three whole giant drumsticks to begin with.

to explain the burnt bones though, I suspect she took the chicken immediately out of an ice cold fridge and put it into the hot oven. this way, the bones would heat up much faster than the rest of the meat and burn. it's advised to let the chicken come up in temperature a bit before you actually cook it so as to avoid this kind of thing.

a final note on the chicken" it looks like she baked the chicken with the herbs on it, which i'm assuming is cilantro. that completely defeats the purpose of using fresh herbs, since you just dry them out in the oven and they lose all their flavor anyway. the fresh herbs should have been used as a garnish to finish off the dish at the end, even if you also wanted to use some to flavor the marinade as well.

on the potatoes, there's not much to say. personally i can't stand skins or lumps in my mashed potatoes, but i guess some people like that. to completely eliminate lumps, he should have used his foodmill that he uses (completely improperly and gratuitously) for "crushing" his canned tomatoes.

finally, he really ought to have vegetables on that plate if he cares at all about his health. a plate of brown stuff is not gonna be too healthy.

Where the fuck are the green vegetables? Broccoli, collards, kale, brussels sprouts, anything? They're so easy to cook and actually healthy for you.

Kat: Phil dinner is ready!

Phil: Well, the meat looks good, but what is this pile of little green trees on my plate?

Kat: Broccoli.

Phil: You just made up that word!

Kat: Just eat it!

Phil prods the vegetable with his fork before reluctantly grabbing a piece to try.

Phil: Vile weed! Are you trying to poison me! Loser troll detractor. Guess what? Your banned. Bye bye.

I can see the Instagram now...

Look everyone! Kat cooked me homemade broccoli!

The two tone color (I'm guessing from being quickly seared in a pan on one side, turned over, and then put into the oven to finish) and the black speckled look from having either black sesame seeds and/or burnt sesame seeds really adds to the effect of the chicken looking diseased. I agree with the other poster that the seeds and herbs would have been better off ground and dusted on the outside with a sauce to make it stick at the end as a crust.

The reads to me as an 'I can't believe you actually expected me to cook today' meal. She boiled some potatoes and smashed them; and tossed chicken legs in a pan with all the ingredients for 5 minutes, then turned them and tossed the whole thing in the oven. Something about the half a plateful of smashed potatoes is funny to me. Portion control be damned Phil gets a double portion of potatoes, I mean she had to know what she was doing cooking 5 or 6 potatoes for 2 people lol

But there's not even any color on that meat. The whole point of browning something first is two fold. The first thing is because it looks good. The second is because it tastes good. You roast meats and you get those roasty toasty flavors in it. But for the drumsticks they honestly look like they were boiled or steamed. And there's green bits at the end of one. Like it was braising with some kind of herb and it just stuck to the chicken.

Had she done this properly she could have marinated the chicken first before hitting the heat and letting it brown on both sides. Then remove the chicken, keep it warm and use some of the marinade with the honey and ginger and pray to God some kind of citrus and garlic to cut through it and deglaze the pan with some it. Or throw those ingredients together with a little bit of chicken stock and treat it the same way. Scrape up all those brown toasty bits on the bottom and let it simmer and reduce until you almost have a sticky syrup left. Throw the chicken back into the pan and toss to coat evenly with this. Throw some toasted sesame seeds over them, maybe some chopped scallions or even something like cilantro and there you go.

And mashed potatoes are mashed potatoes. Not much you can do those. Bonus points on keeping the skins on but that's like a double portion including the drumsticks. Two would be enough, something green should go with it because you need veggies and it helps to fill you up.

No matter if you think the food is fine or diseased, it needs to be pointed out these were her "unemployed, nothing to do all day but cook" meals. The next instagram picture will be her "get off work at 5 but Phil demands a plate of food at 6" rushed, thrown together meals. Wonder how long until she is throwing TV dinners in the over.

She's just cooking what he likes, which is basic beige food for a man with the palate of a toddler. I don't expect most busy (lol) people to cook a gourmet meal every day but at least throw a sprig of parsley on it if you're going to take a photo, goddamn

Honestly I think this is the limit of her cooking. We haven't seen anything so far to indicate that she's a good cook. She's possibly better than Leanna was but that's still not saying much.

Every picture on instagram is the same. Way too much food. A big emphasis on starch and not much in the way of veggies. Compare that to the "healthy" meals Leanna used to make and you'll see a difference.

Keep this in mind: Despite having nothing to do for a good month, she still had to deal with Phil and all of his manchild glory. Would you really want to put effort into anything for a guy like him, especially after how little he cares for her own wellbeing what with that forced video? It's why I don't blame her for going pure "fuck it" with the newest dish. Especially when the pigroach will still rock back and forth in amazement due to ineptitude and gobble it down, all while crytexting about how she's the best on instagram to try and get Leanna to look his way again and get jelly.

You know he's still fucking mad she dumped him.

January- Kat can't wait to move in, she is so excited to cook all these new recipes she never was able to before.

Brisket in a slow cooker and macaroni salad.

Chowder that was so good it sat around for weeks and got thrown away.

Enchiladas

Spaget with box of breadsticks

Chicken with mashed potato

Well they are about to be eating a whole lot cheaper since he got cut off from twitch.
