I think you and I have a very different definition of what is "rewarding".
What grinding? I got everything through the course of playing the game and spent no more than ten minutes on the candy machines.

Kirby is one of those few series that has consistent quality throughout. I recall people weren’t too thrilled with Rainbow Curse when it came out, but looking at videos of the game, holy shit the claymation is beautiful.
Rainbow Curse does have a genuine problem that ruins much of its appeal, though it’s only partially the game’s fault. Rainbow Curse is controlled entirely with the touch screen, on the Wii U gamepad. So that beautiful 1080p(?) claymation is permanently squished down to 480p on the screen that you’re actually using. I loved Canvas Curse and was excited for a sequel, but this is the one Wii U game that I wish had just been on 3DS instead so I wouldn’t feel like I’m stuck playing an inferior version of something that’s right on my TV.

At least the soundtrack is excellent. Kirby is a series that stays consistently good like you said, but that’s especially true for the music, which is excellent even among the series’s weaker or more forgettable entries.

ESRB bumped up Earthbound from E to T when it got rereleased for the first time in fucking forever on the wii U virtual console years ago, probably because of the giygas fight. I wouldn't be surprised if they did the same retroactive bullshit to kirby 64 for having spooky eyeball monsters in it.

I haven't played Return to Dreamland since it first came out as the swan song of the Wii, so this will be fun. Hopefully it'll have some actual new content. Between Forgotten Land being a contender for my GOTY, Return to Dreamland returning, and beating Crystal Shards for the first time since it was new on my modded Switch, Kirby's doing pretty well for me lately. Now we just need Air Ride HD.

Also saw on Twitter that Return to Dreamland Deluxe in Japan is still titled Kirby Wii. Found that funny.

To be honest, I don’t like the art style in the remake. The thick outlines look like they were taken from Smash for 3DS, and everything looks less detailed. I hope it’s not like Pokemon Mystery Dungeon: Rescue Team DX where the art style just kills any interest I’d have in playing it.

But on the plus side, the new sub-game looks fun and it’s nice that they’re also remaking old ones to pad out content. I’m hoping for Wave Ride from Amazing Mirror and that tile game from 64. Interestingly, the song from the Squeak Squad sub-game was featured in the 30th anniversary concert, so that could be a hint for the tile game since it was also featured.

The art style is meant to be a callback to the cancelled gamecube game (but with the modern saturation)

Honestly would've preferred Planet Robobot since I've heard that one is actually really good, and I never got to play it due to me not having a 3DS by the time it came out. But Return to Dream Land is fine too.

I would’ve loved a “3D Dream Collection” with ports of RtDL and the two mainline 3DS games, especially since the 3DS games are much harder to emulate than RtDL. They wouldn’t even have to be remakes, I’d take Mario 3D All Stars-level enhancements.

My boy Wario is 30 too and all he got was another Wario ware game.

I would’ve loved a “3D Dream Collection” with ports of RtDL and the two mainline 3DS games, especially since the 3DS games are much harder to emulate than RtDL. They wouldn’t even have to be remakes, I’d take Mario 3D All Stars-level enhancements.
Put the 2 3DS mainline games then pop in Battle Royale, the mini game collection from late 3DS. BR in hindsight was a prototype of Forgotten Land, complete with very small 3D platforming sections, but just didn't hold up on its own as a full release. BR will end up being a bit of a forgotten entry if it doesn't get released since it was such a late 3DS game.

And I don't know if there's specific problems with Triple Deluxe or Planet Robobot, but Citra has come a long way. My 12 year old CPU can play both Dolphin and Citra roughly on par with each other, even at high resolution with my decent graphics card.
