That dutch oven method is super easy but God forbid you spill that shit, and even a splash will fuck you up. It's the taking it out part that gets dicey. Also it's a huge waste of oil unless you're just going to use your oven for oven frying for the next couple months.The actual cooking sub is one I've read off and on until I gave up on it. There were a lot of people slightly more advanced than this potatoes and tendies guy but quite a lot of them didn't have any learned skill of their own, it was plain to see that they would answer questions based on stuff they'd read and never done, and when it comes to frying things they think the only way to do this is with a big heavy dutch oven full of $45 worth of peanut oil because that's what kenji says to do, and no a little electric fryer will never ever work, and no shallow frying in your little $3 nonstick pan surely wont work either.
A Fry Daddy works fine for almost all things, and as you point out, shallow frying is better anyway. Deep frying in the home, outside of what you can do in a Fry Daddy or similar thing, is barely worth the mess. Shallow frying in a skillet is perfectly fine for chicken.
