What Have You Cooked Recently?

Ribs for nativity feast of St. John the Baptist: Spare ribs cooked and smoked for 7 hours, glazed with BBQ sauce.

Little brother and I cooked them together, he's the master chef, I merely dabble into cooking. I rate ribs 5/5, tender as fuck.
 
I made my absolute laziest roast that I've got in my portfolio.

Seared the outside of a brined pork loin a bit bigger than my calf.
Caramelized two yellow onions in a little clarified bacon grease.
In the roasting pan, mixed Mrs Dash, caramelized onions and a whole bag of brown rice with enough chicken stock to cover it.
Plopped the pork in the center, covered with the lid, put into a 375F oven.
Came back a few hours later or something eventually.

I thought the pork was super squishy to the touch because the oven may have malfunctioned and left it raw, but it was just crazy tender and juicy. Crisis averted, but I'm keeping an eye on that shitty oven.

The ribs look amazing! I'm so jealous that you got to cook with your little brother. What's his favorite dish to make?

He's actually a vegetarian (doesnt apply to holidays) which I never got...he loves cooking for others and makes a mean pulled pork sandwich, but if I had to ask his "favorite" dish it would be some vegetarian korean soy/noodle dish. I'm an omnivore and happily eat whatever he makes tho

It's great that he is a vegetarian and still loves to cook for others! His Korean soy/noodle dish sounds delicious and I'm sure it is enjoyed by many people.
 
Made tiramisu today. Once you get the marscapone and the lady fingers you're pretty much done. But I've been experimenting since I've found the filling bland and unsatisfying. I mixed in limoncino to the cheese before folding in my egg whites and egg yolks, and next time i'm going half and half with cream cheese and marscapone.
 
I didn't take a photo but I'll update one when I make it again. I'm adjusting my diet to all low glycemic carbs in an attempt to work off some stubborn body fat. I made this ramen and was pleasantly surprised by how tasty it is. I was expecting the worst. Cooked for six minutes then hit with cold water. For lunch i made burritos with sausage, rucola, shredded Gouda, french fries and a splash of hot sauce, was 5/5 breddy good.

Dinner was not that great somehow, didn't went grocery shopping so had to made do with what i found in the cupboards at the relative's place i'm currently staying at. Decided on something simple, Chili Oil Noodles. Realized there are no pepper flakes so had to scratch that. Ended up with a meh rice noodle dish, which mostly sucked because the noodles were of bad quality.

Cooked the noodles, then started with a base of minced garlic, minced ginger and chopped shallots, fried in rape seed oil because fuck me, no other oil in the house. I personally don't like the distinct taste rape seed oil has. Added the cooked noodles and splashed it with sauce that was part fish sauce, part dark soy sauce, dash of sugar, starch and a bit of cold water. Let everything cook for a bit, added some asian hot sauce, which turned out to be not that great, garnished with chopped scallion greens.
It really should've tasted better, cooked meals in the same vein a million times but something was off today. Ate a couple of bites, put the rest in the fridge and now laying in bed, still hungry. Dag.
 
I made tuna cakes. Think crab cakes but with canned tuna. Had some extra tuna lying around, added some breadcrumbs, eggs, mayo parsley, salt, pepper, garlic, shallots, and a tiny bit of Old Bay seasoning. Made 4 cakes with 2 cans of tuna, and had them with some veggie tots. Pretty good shit, would recommend if you're eyeballs deep in canned tuna in your pantry like I am.

Oh, those are pretty good and super cheap! Back when i was more into fitness i pretty much lived off these, because fuck scarfing down raw canned tuna, that got real old real fast. I didn't use mayo in mine and used blended oats for binding, cayenne pepper as seasoning. Can't get Old Bay in my country but i've been meaning to order some from Amazon, it's outrageously priced, though.

Thai red curry soup for lunch today, I made a regular thai curry a while ago and I wanted to make something else with the red curry paste I had left, so I made a soup, and it turned out pretty good, I added some extra spinach and celery.

Something I realised at the end of the cooking process, if you don't want the soup to get too thick, either put less rice then specified or more stock/water.
