That's not balanced by any means, but it's not insanely off track. You won't die quickly eating like this.
If you're figuring a farm laborer working your ass off, you probably need about
3,000 calories

20% fat
35% protein
So that comes to

Beans and rice will keep you above ground, but they're light on protein. Toss in three cans of tuna in water, and you're at 231 g protein and 22.1 g fat. The fat is still too low, so add 40 g of Olive oil. That's, of course, 350 calories oil and 660 tuna, so you'll need to back off on something.
Right now I'm looking at

Three tablespoons olive oil
4 cans of tuna in water.
That puts us at

So that's still 100 g more carbs than an active man needs in a day, but it's not totally ludicrous, and the other macros came out nicely, so I'll just go with it.
To prepare 30 days of this ration, which will make you fat if you aren't seriously working hard getting your peasant life going, you'll need
3.75 gallons beans
1.875 gallons rice
120 cans tuna
1.5 quarts olive oil
So, in conclusion, you can stick that in your closet. It's not as bulky as it sounds.
Bear in mind, I'm not saying this is a good meal.plan or even a good "emergency stock." I was just trying to calculate what would get one person through one month of doing something besides sitting around all day.
