Yeah, that's a term. It refers to bosses with mechanics that usually involve figuring out some trick in order to damage them or otherwise expose them to damage. Otherwise, they're extremely difficult if not flat out invincible to everything else you can throw at them.puzzle boss (is that even a real thing?)
A quick example: The Cleft Brothers from Paper Mario: The Thousand Year Door. Halfway through the third chapter during the gladiator tournament, your opponents are a pair of spiky rock skulls. You flat out are forced to use the "run" option in order to end the encounter, with the skulls themselves telling you (indirectly, of course) to do this if you're close to dying, because they are legitimately invincible. Running means you lose the fight but this is intentional - when you return to the lockers, this egg that's been following you hatches into the Yoshi partner and HE is how you win the fight - it's all an elaborate tutorial for how to use Yoshi's swallow/spit attack, because the ONE way to damage them is to literally eat one brother and spit him at the other. They go down in two rounds once you figure it out.
