Ultimately it's likely because Star Trek is a very progressive series at it's core. The original series had a black woman on the bridge as an officer which was a big WTF at the time even if her role was basically a glorified secretary most of the time. It also included a Russian character in the middle of the Cold War, and so on an so forth. That carried forward to future series where they continued to make a point of having a diverse cast and so on.

In modern times that translates to current year "progressives" latching onto it partly for it having always given what they claim to want, and partly for newer series being open to trying out what they're demanding now.

I also doubt that, as crazy as they are, and they try to look even crazier, that they ever intend to nuke anything. They just want them so their sabre rattling for gibs has a little more credibility. With or without nukes they could cause a shitload of trouble just by crossing the 38th Parallel, and it's not like they care if they'd ultimately be repelled with massive loss of life. They couldn't care less about the lives of their citizens.
