I just don't see how "let's all take a day off and have a nice meal with our families" and "we should remember as a society that some of the Europeans who settled what is now this country were pretty rapey and murdery to the natives that were already here" are mutually exclusive.

Traditionally it's supposed to be goose but nobody does that anymore, it's usually also turkey or spiral ham or both.
My Papaw used to tell me stories about how him and his friends used to corner faggots at the gay hook up spots back in the 60s and they would beat the fags asses and rob them. Yeah he would always tell me not to trust any of those niggers and that he only ever met one smart nigger in his life who he described as an African-American rather than a nigger. He also he used to always get in fights with "Mexicans" (all Spanish people were Mexican) because he would go up to them and say "Alright I don't like you, your language, or your country and yall best go on back to where you came from" (he even said this to my brother's Spanish wife). I think ham is most popular. Some people do another turkey or a roast beef. Less popular but not unheard of is duck or take-out, usually Chinese. In the Southwest various Mexican/Tex-Mex dishes, especially tamales, are popular.
