I don’t think it was ever said Ed was non-binary. All it was was that Ed looked and acted in a way that nobody could tell what her gender actually was at first glance. Also, Ed just has a tan and I don’t think it was ever said what Ed’s nationality or ethnicity was, or anyone’s for that matter.

Ed is probably Japanese like any other Anime show has their characters be (haven't watched bebop though so I wouldn't know for that show), its like the Don't Toy With me Ms Nagatoro manga/anime.

Ed is a girl. The show and creators say so. Also, pretty sure Ed is white with a tan. These land whales that live in twitter would never understand but when you go outside and spend a lot of time in the sun, your skin darkens, a tan. "Remember when these assholes cried how Faye didn't look exactly like the anime..." Now this is some reach, but with the case of cosplayers this argument has some merit. Cosplayers doing it better than a show with a budget funny, but that's not really why people were upset. It has everything to do with the actress, her hypocrisy, and lashing out at fans for criticisms and making bold statements. And to say that the netflix bebop Ed looks exactly correct is laughable. The cosplayer looks great but the netflix one looks like he's special ed.

I don't think they've dated a lot of Asians or even have Asians friends. I've slept with enough of them to know just how pale they are. About Jet Black, not a lot of Asians or Caucasians could play such a character when you take into consideration how the face looks and voice. Though I've only watched the subbed version so I'm used to Unsho's voice not Beau. Though from what I've heard he did an okay job.
