Note: none of the hard dry salty cheeses this man listed actually melt. They instead sweat out oil and brown, and this is why they are mainly used as additives to a melting cheese like mozzarella or asiago for that reason alone.Mozzarella is an inferior pizza topping to most typical cheeses you can put on pizza, like feta, parmesan, and romano.
In fact, outside of fresh slices on a good margherita pizza, mozzarella should be BANNED on pizza.
Peccorino romano is the only exception because you can get it semi-stagionatto, meaning it can actually melt.
