I can't verify if this is the act of their payment platform Powerchat.live, but the timing is super sus. If others have experienced this it'd be great to verify and prevent others from experiencing this fraud.

Did the bank determine they weren't Apple transactions or were they unauthorized by you Apple transactions? Sometime people forget about subscriptions or family member or friends buy things on their Apple account. Because it's only Apple transactions and items not purchased elsewhere, could your Apple account have been hacked? The digital product would be going to a device somewhere that's traceable. There were news stories about Apple hacks in September, November and February.
