Let's be somewhat real though, if Sherman had been on the losing side nobody would really contest what he did would constitute war crimes today, specifically retaliating against civilian populations and disproportionate retaliation. That said, a civil war is almost invariably a total war and nobody is as good at killing Americans as other Americans.

It is a sad fact that in a civil war, you damn well have to ensure the losing side does not get back up any time soon.

As an example of an actually prosecuted war crime, look to Andersonville, even though the camp commandant, after evaluating what actually happened, was almost certainly not singly responsible for what happened there. He quite simply wasn't given enough food to feed the prisoners and had no magic to conjure up more. He still got the rope.
