Since I'm a Maple Leaf, I can tell you misgendering here is illegal. She can sue the guy and get him imprisoned. Self ID is legal here (and it just passed in Spain, charges of 150,000 Euros if you misgender a Troon). If she wanted more money and more social media clout, she'd have filmed the encounter and got this guy fired. We have Public Freakout threads and guys like Moist Critical making reaction videos. It's hard not to end up in this vids.He might also have said they couldn't make the cake because reasons. Like their fridge busted, oven was down, last minute order for something, other orders took to long...
If what she said is true, that they were looking forward to making the cake (which I'm willing to believe, given current year social pandering) then my guess is something happened so they couldn't get it done in time/the cake broke and they refunded her money.
But that isn't good enough for clout, so she made the encounter on Twitter look like ~that~. I suspect if it had happened she'd name and shame. Why wouldn't she? She'd be letting people in her area know to avoid that bakery because ~bigots~. It wouldn't be libel either if it was the truth, because the truth is an absolute defense against libel/slander, at least in the US but I doubt it's different in Canada.
She didn't film him, didn't call the cops, and paid over $50 for a Dairy Queen cake. There are SCORES of lgbt friendly bakeries in the city of Edmonton. Like the Masterpiece cake shop fiasco, she did it on purpose. If the man had an issue with the design he should've told her ON THE PHONE. Or guided her to another business. You don't throw out a paying customer and call them a libshit, even if you want to.
