I think people nitpick the changes too much, but I think it would be nice with the tech we have today to let people make their own versions since so many differences exist now. But at the end of the day, none of the changes harm the story or characters. If you watch these movies for the first time, you won't really think you're missing something or seeing a lesser version. The only thing I think is beyond retarded is that one version where Luke screamed after falling from Vader. Other than that, bitching about Lucas changing things like Could City is dumb. I prefer Vader being silent when he killed the Emperor, but him saying "NO!" lines up with the fact someone says "NO!" in every movie.

I'm not sure what you mean. Mace Windu being a black guy is one of the least of the PT's problems. Nobody cared him or Lando were black, while Finn being a goofy black stereotype is his entire character. Windu is boring for a SLJ role but I don't find the casting in the PT cynical in the same way as Boyega in the sequels.
But they're not really that hidden, you can literally find every version of the OT imaginable online.

I don't get people having an issue with race in the Lucas movies. While George is a liberal, he comes from a time where that meant being "color blind", not adding ugly apes to your movie and having them cry about how hard things are for them while they chase after White women while killing White men. George never did anything acting as a self-hating White man or trying to "lift up POC" (other than his odd (((White Slavers))) comment). Meanwhile Disney does that all the time with Star Wars and Marvel. Plus the LGBT shit. Like when they have a little girl running around with an LGBT pin (including the tranny colors) on her jacket in the last Doctor Strange movie. Something like that would be a massive controversy just 15 years ago, maybe even 10. Can't wait for that to be in the Disney Wars shows.
I do just think it would be a nice extra on a blu-ray or something to be able to select what version of a scene you want. Other than that, downloading them is okay. Until Disney has everyone that downloaded them hunted down.

Nice to see Filoni's copter saber fail. I've always hated this thing's design and how it was just a regular double bladed lightsaber with a ridiculous spinning ring mechanic that was made even more ridiculous by making it function as an actual helicopter for quick escapes while also further taking away from the uniqueness of the inquisitorium agents. The fact that slapping on the name of their obnoxious new disney oc onto it did nothing to raise interest just adds another fine layer of schadenfreude.
Personally, I was fine with the design itself, except that the hilt's too short for a double bladed lightsaber. Extend the hilt, remove the retarded spinning and helicopter functions and maybe make it unique to the Grand Inquisitor and it's probably fine.
Hopefully the handle is threaded with cortosis or that's gonna be an easy target.

Now all Disney can do is hopelessly fill in the blanks between George's movies that never needed to be filled because nobody cares about the sequel era they created. They ruined the OT character's happy endings just to bring the Empire back and ensure their focus group approved OCs got the spotlight. The MCU now is like that TV show that should have ended years ago but keeps going because of how popular it is, even if it sucks.
Lucas had a hand in Red Tails which flopped hard because Blaxploitation needs to stay in the 70's. It's a 2012 movie about the Tuskegee Airmen (Negroes learn to fly on outdated rustbuckets, aren't allowed to fight the Luftwaffe, run into racists everywhere, bang White poon in Italy and defeat a squadron of Messerschmitt Me 262 jets over Berlin) and reinforces that they never lost a bomber.
