This is one of my favorite recipes to make for celebrations such as KF being back online.

You should go to the store and get a package of frozen crawfish tails, which you'll thaw overnight and drain right before using. Start off butter and garlic in a pan, cook until fragrant, add the crawfish tails, and let cool down a bit. Add an entire carton of heavy cream to the cooled down pan and garlic/crawfish mixture, heat on medium whilst stirring, and incorporate grated cheese (I like manchego or parmesan, but anything hard and salty would be great.) gradually. Once the sauce comes together, salt and pepper to taste, turn the burner off and let cool down a bit before squeezing a lemon or two in it- letting the sauce cool down and adding it at the very end whilst stirring lessens the chances of the sauce breaking. Toss your angel hair pasta (or whatever shape you like, really) in the sauce you just made, garnish with a bit more grated cheese and crushed red pepper if desired.
