Well I'm not just talking about the super high tech stuff, but shit like engines, chassises, cannons, ammunition, rockets (sans guidance) etc. The decreased availability of microchips and rare earth minerals shouldn't be a that much of a problem for missile production since those mostly run very simple trigonometric calculations (meaning low-performance chips like the russian ones made without x-ray lithography should be enough) and mostly use single-use thermal batteries rather than rechargeable fancy ones.

Do you really think they don't have them? A simple google search shows that they have multiple models. I don't think any of them work particularly well though, on either side.
There's no one "anti drone tech" anywhere, but if you mean countermeasures against the low-and-slow type (from missiles with propellers to quadrotors with 'nades) you basically need an absolute shitload of small radar units distributed around the theatre and either high powered jamming systems and/or cost-effective AA weapons such as programmable airburst autocannons. Which you need to have absolutely everywhere as well. I don't think anyone has the capability to defend themselves properly against such weapons ATM, at least not without a lot of prep work.

It almost sounds like the side that can mass-produce cheap and effective drones with parts that are easy to source will have a massive advantage in this war. Good thing Iranians have established logistics channels for cheap Chinese parts then. I've been hearing that Russia managed to lower the cost of the Geran-2 from $20k to $8k. All those washing machine parts came in very handy, I guess.

For sure, they're a great asset. But I disagree on the "cheap" over-emphasis - you need both dirt cheap short range ones to spot targets for infantry/drop firecrackers all the way up to MQ-9's and remote camera guided cruise missiles.

I'll have to agree with that. My emphasis was on those is because cheap short range drones were Russia's weak spot in the beginning of the war due to some old dusty generals thinking that quadcopters and such are toys for children and have no use for recon. Now that has been remedied and we can already see the results, often in high definition.
