I mean, if a person defines themselves by their fetish, and gives waaaaay too much info about the ins and outs of their sexual habits (unless it's on a board specifically designed to do so) then they're fair game I guess, but you don't choose a fetish.
Some people are turned on by things that aren't possible in real life, and if they want to jack off while looking at a drawing of bulbasaur fucking a kangaroo, then I don't really see the harm.

No, you're absolutely right. People can't choose their fetishes. Though, I still have some other gripes about DA fetish work.
People can choose how to portray their fetishes. It's one thing to draw a simple picture of your fetish, it's another thing to make a long-ass extremely detailed story that justifies the fetishistic situation. I think we've all seen the deviations that have a story in the description. This is just plain creepy and shows that you are so obsessed by this scene that you HAD to come up with a messed up story to go along with it.
I've said this once and I'll say it again, humans are not walking libidos. You can have interests besides your fetish. Many DA fetish artists don't seem to understand this. There entire galleries are filled with fetish work and nothing else. It just shows that they have no control over their urges at all. It also shows that's all they can draw.
