Tbh if you consider the show to have ended with the end of season episode that ends with the Dragon Queen's army sailing to Westeros, and just forget the last two seasons ever existed, it's not a bad ending for the story. It was the last two seasons (particularly the last season) that completely jumped the shark.Given the clusterfuck the show ending turned out to be, why should he finish it? He will never please everyone, there will be tremendous butthurt regardless of how he tries to wrap up the story...so just...why even bother?
How do you want ASOIAF to end? Great, then that is how it ended. Leave it at that.
The Incest Dragon family where finally returning, with a huge army and 3 grown Dragons, meanwhile the Wall had been breached, and the Frost Zombies are loose in the Kingdom, what do you the reader think happens?
Not the first time an "epic" story ends with a giant cliffhanger.
Game of Thrones had such a spergy and autistic audience that no matter how it ended, people would have complained.
I'll give JK Rowling her due, at least her Harry Potter series didn't end with the absolute bullshit cop-out ending that Stephen King wrote for the Dark Tower series, now that was lazy writing.
