I don't think traditional Chinese uses cornstarch much, but they definitely used starches, it's just that cornstarch was the one readily available in the U.S.A lot of the fried Americanized Chinese food uses it as the batter for example. General Tso's/Orange Chicken are the first examples I can think of. Also a thickener in fruit pies (tapioca flour is also common).
I mainly use it as an emergency ingredient because I fucked up some gravy or sauce and it's way too thin. It's not as good as naturally reducing, but if you have to have the gravy/sauce ready when the other stuff is done, it's a lifesaver.i think it's used as a thickener for some things and used in battering for deep frying stuff?

Yeah, that's actually pretty cool and changes the texture of meat significantly. I only tried the water velveting method because i didn't want to waste a shit ton of oil just for trying something new out, i imagine the hot oil version works even better.
