What Have You Cooked Recently?

I freaking love sausage stuffing. Pepperidge Farms herb stuffing baked with crumbled spicy breakfast sausage is my favorite part of Thanksgiving. I don't know why my boomer in-laws don't appreciate it.

Sausage stuffing (especially with spicy sausage) is by far my favorite part of the Thanksgiving meal. We also tend to have it for Christmas as well, so we make a double batch and freeze the second one to bake come the big day. I spent the Saturday before chopping up different breads into cubes to dry. Mostly cheap sandwich bread. Sometimes you just need shitty Wonder Bread type loaves to get the job done.

Also made my first grilled cheese sandwich in forever last week since I had some extra bread. I think grilled cheese sandwiches were the first thing I learned to make that wasn't just nuking shit in a microwave or toasting Pop Tarts. I'll mix up the cheeses or make a croque monsieur from time to time, but dammit I just wanted a simple American cheese special with a bowl of tomato soup. Tis the season.

Used up the rest of the extra bread for some very basic croutons that I tossed in a mix of olive oil, melted butter, and spices before baking. I'm planning on making more croutons in the coming week after baking a couple loaves of sandwich bread. I'm considering adding a packet of ranch dressing mix in a batch.
 
Tonight was grilled bison sirloin steaks with oven roasted Brussel sprouts and Yukon Gold potatoes.

I just used avacado oil, salt, pepper on the steaks. The veggies were made with rosemary and garlic infused olive oil, fresh garlic and rosemary, salt and pepper.

I made my steak rare and everyone else's medium, per request.

I sort want to make saag paneer tomorrow with naan.

My wife is nursing so I've been making her calorie-dense meals that'll (probably) promote milk production

Case in point: tonight it was yellow curry, sauteed some onion and garlic together with some potatoes in coconut oil, stirring a lot to prevent too much burn in on the bottom of the pot, and then spiced that shit up (ginger, coriander, turmeric, my favorite 6 chili powder) and added yellow curry paste (lol) and two cans of full fat coconut milk

Let my bastard curry bubble for a while and then added carrots, spinach, brown sugar, fresh lime juice, cilantro (sorry Jewsh) and about 2.5 pounds of halibut to it

Shits cash fam, I'm murdering it as we speak

I did an asian style grilled duck breast with bok choi. It was OK. The duck went up like a nuclear bomb on the grill and I had to salvage it (drinking was involved) and it wasn't quite as crispy as I'd hoped. I didn't marinate enough and then of course I wasn't watching it closely enough and had to rip all the burned skin off before serving it anyways.

The bok choi was much better. Sauteed it with some fennel, garlic, and some Thai chiles for a little heat. All in all I gave myself a 6/10. It was good, but it wasn't great, I'll try it again soon.
 
I'm currently working on using up stuff that's been sitting around in my pantry for way too long, something like a pack of potato starch/flour. So I've made these yesterday:


10/10 would make again, super easy to make & extremely delicious.

Today I've made "creamy curry udon noodles" - basically a pack of S&B Golden Curry, veggies, coconut milk, tofu & udon noodles. Takes a whooping 15 minutes to make (if you use frozen veggies) & is probably one of my favourite lazy foods to make lately.
 
Took a tortilla, threw some homemade tomato-sauce onto it, topped it with ham, pineapple (yeah, yeah, i know), corn, bell pepper, onion & cheese, and baked it in the oven. Kinda like a lazy pizza with a super flat dough at the bottom. Shit's good.

Made a galette with eggs and bacon earlier, and crepes with nutella in it.
Still not enough shit to do much of anything but I at least got some eggs and bacon from the store nearby so.

I've done shit like that with homemade flatbread is flour tortillas really a decent alternative? I was thinking of using some leftover salsa for a thing.

Also ham/pineapple is a meme, bacon/pineapple is best.
 

I made this. I used half the recommended bread crumbs. It's fucking amazing though. Cook it immediately. It is not gross, even if you dislike anchovies, the way they are used is exciting and enhances the sauce. I used sun dried tomatoes pureed with a small amount of tomato paste to substitute the estratto called for in the recipe.
I used to make this all the time! So simple and good. I love it in the early summer. I am a big fan of anchovies.

Tonight I made chicken paprikas with little mushroom dumplings (sort of similiar to tortellini) and roasted brussels sprouts.

When I next go grocery shopping I'm going to be baking my first ever gingerbread house. I found a free template online for a Halloween house which I will adapt for Christmas.

Here is a model I made out of cardboard, I intend to cut out the windows and glaze them with hard candy but I'm keeping my rotary blade sharp for the actual thing.

If it turns out half decent and not a complete disaster, I will post a photo once it's finished.

If you like the actual pizza toppings more than the dough, yes, very much so. It just burns easily around the edges so that's something to be careful about.

Yeah, I like to make them from Mission Carb Balance burrito-size tortillas. Only 5g of carbs per tortilla, and you really can't tell they're low-carb.

I made Bananas Foster as a dessert for a semi-fancy dinner event,

Was a lot of fun with the flambe and all and surprisingly tasty for such a simple recipe. It's just banana's, butter, brown sugar, cinnamon and then some spiced rum for the flambe.

I do recommend, served with nice vanilla ice cream it's a nice dessert.
 
Today's "using up the shit in your pantry" meal: Rice salad.

Cook rice, add canned beans (I used black beans & kidney beans), corn, feta cheese, bell pepper, some (spicy) peppers, stir well, serve with a sauce of your choice, enjoy.
For a sauce I've combined cream cheese with some pineapple juice & vinegar, added some leftover pineapple slices from yesterday, put some Chamoy on top - perfection.

Man, this brings back memories of broke university days... :lol:
