I figured it out the first time I got a mount (and I got a mount back when it meant something, when you had to save up some five thousand gold to do it) that you could put the summon item onto your hotbar. Oh my god. I have to see to see his hotbar set up, I have to see how many bars he's running because I think he's being an idiot about this in ways that boggles my mind!

Start here.

Left click on the mount's icon at the left panel and put it into an empty slot on your bar. Go to Keybindings and find which slot it's in and set something up for it.

Edit: You don't even need to use a macro if you are just using one mount, using the keybind again when mounted will dismount.
