I’ve been served too many “rare” steaks that were raw in the center to want to risk anything less than medium rare.
Also steak is getting fairly pricey these days, so I most often check the sales and manager special and cook it pronto. You gotta cook it a bit more if you’re doing that.

He is from the balcans they cook every meat well done and then some until every juice is evaporated. If he has no idea what rare, medium or well done steak means you will have to ease him in with medium steak first then you go medium rare. Otherwise he will freak out plop the meat back and cook it till it's hard as brick . Don't ask how i know this i still have PTSD from watching it happen .
