Don't you need a MS account to play some of their IPs that are on PC? Sounds like this is nothing new.
Minecraft Bedrock is linked to a Xbox Live account for online play and microtransactions. You can play the base game offline without problems.
I don't play any other MS games so wouldn't know about Bethesda, etc.

On-topic, I don't know if that contract they want people to sign is enforceable in its entirety anywhere. It will certainly run into trouble in any country with a legal framework based on Roman law.
Towards the end there is a section where you exempt Sony from the consequences of the laws of your nation in matters between you and them, an act I don't think is legal anywhere.
Shit like this is usually attacked in court by pointing out that you (the party who signed the agreement) are not in a position to exempt anyone from the law, and even if you were, there are certain constitutional/natural law rights which nobody, including himself, can sign away.
There is a South African case from the 1940s regarding "assisted suicide" which argues this rather concisely. A hypochondriacal German aristocrat signed a contract with his personal assistant wherein the latter was instructed to kill him and indemnified against all consequences of said act. I can't remember whether the PA got life or the gallows, but the contract got thoroughly shredded. (If I can find this case I'll cite it properly - I know I have it, but I have hundreds of other [paper] books too)
