You get it back if you give the full amount to the court yourself. Most people use a bail bondsman who typically charge 10% of your bail and they will put up the full amount to the court. The bondsman then gets it back when you show and you are out the fee.
You can also put up real or other property as collateral, but it's generally a pretty technical process so you're still going to end up paying a bondsman in most cases to make sure it's right. They'll get a security interest in the property and depending on how high the bail is, it might be considerably less than the usual 10% since you're just paying them for the administrative end of it.
