Whether they'd win the lawsuit or not is one thing but either it's more than enough of a case to be a massive fucking hassle for everyone involved, this is why even big companies will usually jump through hoops to avoid lawsuits even if they know they'd most likely win with an army of lawyers. Also I think I remember one of the fish mentioning getting the contract the day they arrived, which wouldn't look good in court if true.I think Payton, a 19 year old girl, punching Frank in the head is a reasonable reaction. I think most states consider using non lethal force to defend your property as self defense, and most states consider non-consensual touching to be battery. I'm pretty sure even spitting on someone can be considered battery.
Obviously they signed a contract with a bunch of crazy shit in it, so I'm not trying to say they could sue or anything. At the same time, though, I wonder if they got rid of Frank for legal reasons. Multiple people kept grabbing weapons, Frank got injured, and Burt and Mizzy both claimed to be injured. A bigger deal might be Mizzy's medicine, if it's prescription only then taking it from her is a felony and I can't imagine that a game show contract would protect them.
