The fact his lawyer apparently suggested coming to a settlement agreement suggests that's not as watertight as he thinks, and Ethan's basically said he's happy to spend six figures on legal fees over giving her any money. Lawyers who work for a client as petty as Ethan generally won't suggest or recommend a settlement unless they think they're likely to lose.

It's not that surprising. Ethan has always been exceptionally sloppy with his business. He had a contract with an MCN and was underpaid over $600k over multiple years before anyone even noticed, and he resolved the issue by airing it out in public and directing his fans to harass the company.
