I like to infuse sauces with bigger ginger pieces but i strain those in the end. Why the heated oil on microwave? Wouldn't be better to do this on the stove and let it reduce a bit?

He heated it in the microwave because he's a pleb. And reducing the oil wouldn't do much at least not as far as I know.

A microplane grater works great for ginger. I usually peel it first too.

Works fine but for stuff like this I'd rather cut it up fine. When you microplane it you wind up with those fibers in it. Cutting into matchsticks and then chopping into cubes doesn't give you that.

But yeah if it's quick and dirty a microplane works.
