Realizing I was just as guilty as the hood rats on TikTok going "whypypo don't spize deir fud, u kan stil tast chiken or bef and sheeet" made me realize I was doing the same thing and immediately slashed my sauce -- and sodium -- intake by several orders of magnitude. Felt great, man. And it turns out I actually enjoy the taste of chicken, beef, pork, etc etc. You don't have to smother them in orange sauce until they're literally candy with protein hidden inside.

Yes, the "Chinese" food we get in the US is not real. I was fortunate to have a real experience at a Chinese restaurant where a Han co-woker ordered off the secret menu. Nothing too exotic as Chinese will eat everything that moves, but still interesting. I have also had former Indian co-workers explain the various styles of cuisine as I tried them out. Unfortunately, without people who know at restaurants run by the correct natives, it's difficult for most to experience the authentic styles.
