I think It's deeper than that actually, Jake doesn't want to just be any girl he wants to be Secret Gamer Girl. Jake desperately want's to be the idealized person he's built up in the SGG persona, beautiful, intelligent, and beloved by all. He's gotten to the point where he's letting his real body and identity rot away because the real world doesn't matter to him anymore. SGG is what's important and he'll do anything to preserve that identity. That's why I think it's not implausible that Jake will die soon, not from suicide but out of neglect. He's essentially abandoned his physical self to exist entirely in cyberspace like some sort of sci fi dystopia.
I agree and that's why Jake hasn't taken even the tiniest baby step to transition, it's just part of the fantasy. His online persona is his entire life and allows him to escape the grim reality that is Jake Alley's existence and pretend he is SGG. I think entire online persona he created is heavily based / inspired by his beloved Chelsa and that's the reason her ignoring him is so upsetting and intolerable. Part of the online persona is heavily reliant on Chelsa being SGG's BFF or lesbian love interest and her ignoring SGG is destroying a very important part of the fantasy for him.
