I loved that video. It reminded me of my childhood, when people learned how to cook by going to work in a hotel or restaurant kitchen at the age of 15. Lots of my school friends learned by joining the Merchant Navy and becoming Cunard Yanks -- working the kitchens on the Cunard Lines between Liverpool and New York. None of them ever got a Michelin star though. None of them had Marco's passion for the craft.

I've no idea how anybody works in a hotel kitchen though. I tried it when I was a young man. I lasted about two days. It was hell. To this day, I've never worked so long or so hard.

But Nick, of course, insists that his entire livelihood depends on being able to obsess over Aaron Imholte. Every opposition to a continuance demands that without the Imholte Impaler, he will wither and die.

Melton, on the other hand, might finally take the hint now that he’s out from under White’s Nick-driven influence.
TLP has other segments, other targets, and room to pivot. Losing the “Moobybucks” will hurt, sure, but it won’t cripple him the way it will Nick.

Funniest outcome: this is true, and by refusing to compromise even an inch, Nick ends up with a severe and long running HRO while Aaron walks away clean. Then Melton negotiates with Aaron, is restrained from talking about the kids and restrained from stalking Aaron IRL but gets to keep his show.

I am grateful for having the "kitchen" experience, it put me thru school with minimal loans, though if someone bequeathed me a 4star restaurant, I'd wonder what I'd done to make them hate me that badly.
I have noticed that there is a high number of alcohol/drug addicted cooks. (I never worked with a true "chef") I can't say I blame them. The hours are brutal and the responsibilities great.
Fortunately, I went into the bar end of things, since at least there you are in direct control of your customers. Everyone knew better than to piss off their alcohol dealer. If you want to be poured watered down drinks, get cut off or 86'd, just go on and mouth off.
I wonder what Nick feeds his children? Not steak, I assume. Macca's and other goyslop, most likely.
He needs to learn how to make a big ole pot of soup or stew that can be made in a large amount and is easy to reheat or keep warm on the back burner. But that would make too much sense.
Nutritious, delicious and wholesome? Not in Nick's house.

May I ask where you got this information? Melton said the hearing was under a minute long and he did not mention any change of representation.

This appears to have been a misreading of @Last Ride's previous summary of today's Zoom hearing which mentioned "a Mr Louis representing Melton." Barring any surprises this would have to have been a reference to Lewis, who is merely the Barneswalker's associate.

That said, one could hope for an actual substitution at some later date, considering the beginning stages of a snakening that appear to be underway on Twitter unless MAPton is being sarcastic about who is to blame for the absolute clusterfuck going on today:

BTW, the BBC Maestro series, shows some good recipes from MPW

TL;DR
-Keeping the stars was about defense, and not attacking. White felt it made him conservative and turned into assembly line instead of a man exploring his cooking abilities.
-Michelin has made getting a star way too easy and watered down and chefs are becoming media darlings instead of staying as chefs
-Never saw his family
-Similarly to Alexander, he lamented there were no more lands worth conquering
