It's been proven that deep frying anything basically completely destroys its nutritional value, by ruining vitamins, antioxidants, polyphenols, replaces any good fats with bad fats, and if you don't fry in a vacuum, any starches turn into some amount of acrylamide, which is fantastic for causing cancer. So, frying food is basically the best way to turn something that may have had nutritious value and was good for you into something that is now going to contribute to your cancer risk in a meaningful way.

How hard is it to just steam some brocolli or panfry some asparagus to go with your hamburgerpizzasteak @Mound Dweller
 
Some people aren’t just picky, picky you can get over with enough hunger. A subset of those people cannot eat a whole bunch of things. It causes them intense distress.
I have some experience of this- feel free to DM me if you’d like some ways of sneaking veg into things to give to people who can detect homeopathic quantities of veg.
do you like home baked chocolate muffins for example? I can bake them using courgette for moisture and you’d never know.
(I am aware this is both an abomination and a betrayal, but she who has never faced a glut of home grown courgettes may cast the first stone.)

What if he blended his veggies into a very fine consistency, and mixed them into sauces? You can pour the mush into an ice cube tray, and freeze individual veggie-cubes for easy mixing and consumption. I do this to get more veggies into my diet, and you hardly notice them in sauces.
