Good entertainment is kinda an artform but it's not that difficult, you can learn it. But he, after 10 years of a legacy, has not the splinter of an idea how entertainment works. I'm buffled how someone is capable of that. It's like drawing for 10 years, each and every day. But all you can achieve are scrawly stick figures.
I'm not sure if "I didn't know that" is just a habit of saying or if he really defends himself with that. However this is just a stupid phrase. Of course he can't know that. Nobody knows that. This is why the game explains it. I wait for the moment he says the same shit about plottwists.
He doesn't learn because he's convinced he knows everything he needs, and is likely to feel afraid that if he tries to mix things up it won't work as well as what's working now. Phil always goes in doing everything the exact same way because change is frightening.
And yes, he definitely deflects defensively by instinctively saying "I didn't know that" - he does that all the time when he finally understands some game mechanic. He doesn't want to feel stupid for not getting it earlier, or is afraid he was supposed to know it, so he says it out loud more to himself than to anyone else; "I didn't know that, and therefore I am not at fault, everything is okay, relax, you're awesome."
