I agree it may be overwhelming to want to eat things you need to give up or wind up back in the hospital for whatever reason and on top of that to have hundreds of people on the internet telling you their methods and feedback but the thing is she only needs to listen to one person: Her Doctor. Yet I'm sure the amount of time she's said "I shouldn't make my private information so public because I can't deal with the critism/comments/feedback" is probably into three digits and not being hyperbolic.
And she admitted a lot in that last video, I think more than she realized. She admitted she was having trouble coming up with a FULL week of planned food and that she was incorporating a sort of "intuitive" eating and didn't want to figure out what to eat day by day to listen to her body's cravings. What we saw was a blank worksheet, then we saw a worksheet that had only one day planned out and even then it seemed like a scattered mess with arrows, corrections and crossed off items. She also complicated things by shopping first and then realizing she had to present a plan to her doctor other than "check out my costco haul teehee!"

Yet that's the thing, her body is used to carbs, fats, salt and sugar. Her body is not what she needs to listen to. I said it in an earlier post, she keeps struggling with what she wants to eat versus what she needs to eat. That's why the doctor wants a full schedule out of meals, WITH a workbook WITH lists of "yes" foods with daily portions (e.g. 3 servings of dairy. Dairy is cow's tard cum. A serving is 1 ounce.). So all she has to do is go down a list, pick items she likes and find recipes for them.
It's not that hard to look up recipes...add in a few ingredients and add in keywords 'healthy recipe'. Boom. There it is. She could also go on forums like Reddit to ask for tips and recipes. And she doesn't have to eat the same thing every day though for meal prepping in addition to planning, this is the simplest method. or do a basic 2 recipe and alternate - e.g. Sprouted bread toasted with half avocado on it, and serving of fruit. In some cases she could make a mango-pineapple salsa and put that on top - boom there's your fruit for some avocado toast that's tasty. Or whole oatmeal with a tablespoon of peanut butter and one banana. Keep it simple - but that's always been a fault of hers. Her brain is wired to think 'healthy is complicated'.
She got a bunch of black beans, which are not keto-friendly so that was a WTF choice since that was what she was going to do, until Doctor said "no, fuck that, use the plan" and likely why she didn't add into her ground turkey taco meat. If black beans are on her 'okay' list, then fuck it, they pair well with sweet potatoes. That right there is a common lunch as sweet potato and black bean chili is a thing.
But she even said in that last video the first step for her is to stop what she calls 'binge eating', which I consider to be just overeating shit food on a routine and regular basis, and to get into the habit of making and eating her own meals... a life skill she desperately needs to develop.
So yea, focus on eating at home, making her own food, not ordering take out, fast food or other restaurant food at all, and getting on her 3 meals and 3 snack routine. First week or two her body will have to adjust to not eating a bag of chips at midnight before bed and this is why she should not use this "intuitive" eating method to determine what to eat in a day. Drink water, wait until your next meal or snack time as planned.
But still, it's not that hard and if she's overwhelmed, then she needs to just focus on her Doctor, and find something else to do offline that can help distract her from the internet yet that's pretty much her identity now. She'll never give up YouTube - she said it in another previous "quit chimp' where she admitted without youtube, she's just Chantal and nothing else.
