Define "actually J*-e-w*-i-s-h". That has a different definition in many sects of Judaism and in many other religions.
You can call her "actually J-e-w*-i-s-h" but she wouldn't even be considered so by Orthodox Judaism. They don't intermarry outside of their religion, otherwise you are excommunicated from them.
If you are Buddhist and she is marrying you that means she is a secular J*-e*-w* or a Reform J*-e*-w*, neither of which are considered in good standing by Ultra Orthodox, Orthodox or Conservative sects. You have to have a conversion certificate to be considered a "real J*-e*-w" by them too, which she doesn't have, otherwise you wouldn't be able to marry her. No Sanhedrin would marry the two of you
So argue all you want over who is "actually J-e-w*-i-s-h", but keep in mind, the same thing could be said about you to others.
And about canons and books...the fact remains: unless you are Catholic, you don't have to accept their canon. You have a right to pick and choose which books you believe are authentic. None of the original authors of those books bound their books together. The Catholic Church did that in 325 AD.
