What Have You Cooked Recently?

Made some baby nugget potatoes in lieu of a full dinner, as I was craving nothing but this. My recipe: Boiled until tender, drained, then tossed with a couple cloves of minced garlic (yes, raw!), a tablespoon of olive oil, salt, cracked black pepper, and fresh dill. Eaten with a big glop of sour cream. It's also an amazing side to pretty much any protein.
 
Pineapple kielbas and rice, pepper, onion.
Continuing my trend of seeing whats in my cabinet and using it all up, german pancake with roasted honey apples. Cast iron is getting a workout. I considered adding ginger but i didnt want to over complicate things.

Just moved to a place with a gas stove and im never going back to electric.
 
Deciding to go a bit more season happy with a steak than I usually do. Salt, pepper, garlic, parsley, and a bit of red pepper. About to start it off with the reverse sear method.

Still trying to determine what cut of fries my potatoes will become. I'm thinking either steakshop (deepfried using the pot), roasted (cubed and air fried), or german (pan fried).

EDIT: Went with german fries. They worked out fine.

Beer bread!

The photo doesn't capture the full majesty. Today's the autumn equinox* so I gotta do pagan thing and celebrate. The bread is really quick and easy, it's just:

2 1/2 cups flour
12 oz beer, I used Fat Tire ale tonight.
1 tsp salt
2 1/2 baking powder
2 tbs sugar
Butter of some amount, I eyeballed it. Half a stick maybe?
Cheese and herbs if you want. Tonight I used a sharp salty white chedder and some gruyere, and thyme.

Preheat the oven to 375 and get out a smallish loaf pan. I used cast iron tonight and it did wonderful things.
Mix all your dry ingredients together, pour in the beer and marvel at the foamy bubbly wonder. Mix that up and add your desired level of cheese. I mixed in just some of the cheese and left the rest to add on top once the dough was poured in the pan. Topped that with some thyme and poured melted butter on top. It is enough butter to make you say "holy fuck, that's a lot of butter".
Bake that son of a bitch for 45 minutes and serve with even more butter.

Sweetie's Macaroni Surprise.

As you are aware of my Wife is disabled and wheel chair bound. Well I encourage her to do as much as possible so she wanted to cook something that she has not done in ages. So I assisted her when needed. Yea it's that good to share.

1 box (1 pound) of Elbow Noodles.
2 oz of milk.
12 slices of cheese (more of less) of your choice. We buy cheese in 5 pound blocks so we cut as needed. We use Monterey Jack Cheese.
Handful of Cheddar Cheese chips. We use the Wallmart Version of Pringles.

Preheat to 375.

1. In a pot of hot water cook up your noodles until they are done.
2. Drain your noodles and then transfer them to your cooking dish in a layer at a time.
3. Layer your cheese, then more noddles and so on.
4. Add the 2 oz of milk and let it settle to the bottom.
5. Crush a layer of Cheddar cheese chips on top.

Place your cooking dish on the top rack in your oven. Cook to its golden brown on top which takes between 10 and 20 minutes.

Take out of the oven and serve with the rest of your dinner. Enjoy.
 
I've been lazy on cooking for myself properly, but I made a bucket of fruit wine recently. It used pear, ginger, and pineapple, but was bread yeast and not very much sugar so the alcohol content ended up very low. On the other hand, it was a very refreshing and ended up being bubbly so it was a nice end-of-night drink.
 
More Japanese curry. Potato, carrot, onion, beef. After thinly slicing the beef I soaked it in a baking soda solution. I read that it would make the beef tender, and it actually worked. I used S&B extra hot curry mix, added a pinch of salt, hondashi, msg. Sprinkle of chili oil on the curry and sesame oil on the rice.
