Dough:
500g of flour ( go for heavy flour, 00 )
325ml of lukewarm water
10g of yeast
3g of salt
>Take 2 bowls a small and a big one put in the big one the flour and the salt and mix em well so that the salt isn't felt by the yeast.
>In the small bowl put a small portion of the water just enough to cover the yeast and mix it with the yeast.
>In the big bowl open a hole in the middle of the flour, poor in the water
>After you give it a couple shuffles throw in the rest of the water+yeast you got there
>Give it a good mix till it becomes solid and stops sticking in your hands
>Put it on the table and start kneading the dough by hand
>Put it in a bowl and cover it with a towel, let it rest for 40m, room temperature
>After 40m take it out and chop it in half, put the 2 pieces again in one bowl each and again cover em with a towel and let em rest for 40m, room temperature always
>Dough is ready
>Grab a piece spread it out with a pin or by hand if you are some God that can do the spinning on hand
>Drizzle with some olive oil and poor on the tomato sauce ( i go for a classic tomato basil )
>Add Mozarella + toppings of your liking
>Drizzle again with some olive oil
>In the oven and how much it will stay depends on the oven you have
>Repeat for the other ball of dough or wrap it and have it ready for when you need it, store it airtight in the refridgerator but not in the freezer. It can last for up to 3 days
