I thought Castlevania was… okay. Not as good as I hoped but not awful.Not Netflix I can tell you that much.
I liked Castlevania and I'm currently enjoying Odd Taxi, but off the top of my head those are the only recent things that come to mind.

I thought Castlevania was… okay. Not as good as I hoped but not awful.
The racially diverse Wallachian village was the only time I wondered whether there was an agenda at work. If Carthaginian refugees had made their way to Eastern Europe after the Punic Wars, then so much time would have passed that their descendants would look like everyone else. It would’ve made more sense if they were Arabic Christians fleeing the Ottoman Empire. Then again, there are vampires and demons and shit so who knows what their history looks like. For all we know. Pharaonic Egypt may well have conquered Europe.
Castlevania is what I like to call "schlock kino". When it's bad, it's bad. When it's good...well, it's still fairly bad but the characters and action make it worth watching. Hopefully Warren Ellis will be involved less with the Richter show.

It is pretty weird for someone who actively took pleasure in hurting people to get a happy ending. Say what you will about similar characters in adjacent shows, but they weren't overtly malicious about it. This feels like wanting to have your cake and eat it too.Given how they gave a hatchet job to Hordak in this version (Hordak should not cry), he doesn't deserve a happy ending.
This is really late, but Amphibia is surprisingly good. The characters are fairly well-written and likable, the jokes all land, the setting is fun and interesting, nothing feels token-y or preachy, and the humor is relatively mature (as in the jokes are stuff that adults will find funny too, not Adult Swim-tier humor).Oh God. It does help as well that Amphibia leans heavily into the sort of cartoon violence that only cartoons can manage (without getting into the gore that adult animated series do). Some of their scenes have felt borderline Warner-esque for the relentless glee being had.This is really late, but Amphibia is surprisingly good. The characters are fairly well-written and likable, the jokes all land, the setting is fun and interesting, nothing feels token-y or preachy, and the humor is relatively mature (as in the jokes are stuff that adults will find funny too, not Adult Swim-tier humor).
It takes a bit for the plot to kick off and the first season definitely leans more into slice of life (that happens to be set on Catachan Jr.). However, near the end of the first season and all throughout the second it really starts picking up, and because of this it goes from entertaining but simple to genuinely good. It's definitely one of the better shows airing, and it makes me sad that it doesn't get as much love and attention. Though considering the current state of internet fandoms, that might be a blessing in disguise.

And as you say the lack of attention helps since I have not seen the "x character is this ethnicity and that's why it matters so much!" articles that the Owl House for example is drowning in.

I have criticisms of the show but compared to She-Ra where I consider the show as a whole deserving of criticism it's reasonably solid.
Back in the 2000s we had (for example) Asian-American superhero cartoons like Juniper Lee and Jake Long. Nobody made a huge deal out of it and it was for all children to aspire to.
