Yes, or drums, which you famously need to coordinate different speeds with both hands and probably a foot for the most basic tasks. Or the harp, where you're expected to very precisely use both hands to play different strings at once. Or the theremin, or bagpipes. Honestly, it's hard for me to think of an instrument where you aren't capable of playing multiple notes at once and/or where you don't have to coordinate both hands simultaneously. Even if we're only counting cases where you need both, there's probably more instruments where it applies than those where it doesn't.That's like saying art is just drawing a bunch of lines, or coding is just typing. Its reductive to the point of insanity.
Also, if Pianos are hard because you need to play more than one note at a time for chords, why wouldn't you include other instruments that can play chords? Guitars you play plenty of chords. Banjos too, hell even bass guitars use chords on occasion. You can even do multiphonics on brass instruments, though to be fair, I think they sound awful as a general rule. Maybe even more, but those are just a few examples that I can think of, of instruments that prove her thesis wrong.
Also, the human voice can be multiphonic. If you look up overtone singing from some (primarily) Asian cultures like Tuva or Mongolia.
You can hear overtone singing really clearly in the intro to the song, its that low humming and whistling kinda noise over top of it right as the vid starts.

Like everything that comes out of Jerry's mouth, the crack about how easy it is to play instruments is completely baseless to the point you have to question if he's doing it deliberately to drive up engagement. If it were actually that easy to play, why doesn't Jerry actually play an instrument? Why not make a bunch of WoW cover videos to earn some easy cash, or make some custom music for his fanfics or something? The answer is he can't, but he's gotta come up with some sour grapes excuse so he doesn't feel like a failure.
