I don't grasp the mentality of the guys that find these types of hags attractive.
Ian likely grew up an angry incel, but at some point struck a nerve with the internet and managed to monetize his anger. Take a step back and forget about how his content isolated from himself makes him out to be smart and respectable. He shaves his head constantly, ironically makes himself look like a pedophile or an otherwise suspicious person. His schtick is making a big deal out of non-issues, more-so than than content cop at this point.
By having a 'strong woman' for a girlfriend, he verifies himself as a chad. She doesn't want to roll over and just let him make the money or (god forbid) support his channel with management or scheduling or literally anything. She wants to make money of her own as well, so when he eventually realizes he's in a toxic relationship, she can jump onto the next dick or even pay rent herself.
There are only two kinds of relationships for content creators: Two strong characters who happen to want to fuck each other, and the traditional (inclined to say h3h3) relationship, where the weaker of the two support the other and cultivate a 'loving family' image (minus Ethan's jewery). Ethan basically has to strive for the first one because nobody would care for his edgy content if he also ran around with a cute softspoken wife in the background.
Notice how Ian never talks or shows off his private life. Absolutely everyone does this, especially Maxmoefoe and the people Ian used to hang around with. They made money off of being a bratty bunch of boys. Now he rears his shaved head once a season to drop a video nobody asked for, and he just gets praised as a funny-haha ironic youtuber being angry at things nobody care for. You know, like AVGN or NC at this point.
I take some kind of sick joy in seeing relationships end, because it means that both parties have to revert to being themselves and discard what they stole from their partner. People in relationships unquestionably learn and alter themselves through their partner, but that's not even apparent in this case. I really do not know what Ian gains from this hoe. If you want to see an actual healthy and funny version of this kind of relationship; a 'normal' girl and an unattractive nutjob dude, go look into Mizkif and Maya. Hell, he shaves his head constantly and makes himself out to be ugly as well. It's basically just a better version of this shitshow of a couple.
