One Human can kill basically any animal (except for some lions or gorillas I guess), assuming it's varied terrain. Especially a herbivore. Just harass it, use your ability to climb and think ahead to avoid retaliation. Throw rocks, make scary noises while it tries to sleep or eat. Make it's life hell. Harass and wear it down while the dumb animal is incapable of strategizing out of the situation or retaliating. Then eventually kill it with simple weapons.

The only problem is tracking the animal, which requires a high skill set.

If the Human is being a retard and trying to fight the animal immediately in a to-the-death fight based purely on physical power, it's like using a gun as a melee weapon. Human power comes from the brain, a fight situation that excludes that is an unfair handicap.
