I just started my millionth Skyrim character. What do?

Play Daggerfall instead.
Counterpoint - play Morrowind if you want to play a different Elder Scrolls. Daggerfall with all it's scope sounds good on paper, but it's actually perhaps more shallow than Skyrim despite it's reputation. The world may be 1000x the size, but you trudge through pointless wilderness and find nothing or walk around clusters of hundreds of identical buildings in the 100s of identical towns. You're basically expected to fast travel everywhere (again, a criticism often levied at Skytim) and in the few cases you can't finding the entrance to whatever place they want you to go is such a pain in the ass when it's some stupid entrance in the middle of a landmarkless wasteland. The places you go to are just messes of 3D maze pieces that are not fun to navigate outside of the few hand-crafted ones for main story stuff.

All of Daggerfall's mechanical depth is wasted on it's lack of meaningful content to use with it. I was surprised to learn all this when playing it expecting it to be the best in the series, but it's true. Morrowind is the best balance we have between older TES mechanical depth and newer TES world design. Despite how much I love all the skills and the advantage/disadvantage system, I'd rather play Skyrim.
 
I put over 2000 hours into Skyrim before I figured out I just like backpacking and trail running.

So maybe try backpacking or trail running.

Install mods that turn every character into giant titted bimbos with ginormous dicks that constantly try to rape you, adds some much need challenge to the game.
