Can't pin the blame on anyone if the door was never broken into, locked from the inside, and the guy has an icepick jammed in one of his vitals while his autopsy says he died a few months before despite everyone knowing he was alive till the funny murder and all evidence pointing to him being alive till that point from like every angle.

Choose a victim unlikely to be investigated (like a hobo or a hooker) in a city with a high unsolved murder rate, and completely destroy the corpse after (such as melting it with acid or burning it at a high enough temperature to not leave bone fragments) so it stays a missing persons case indefinitely, if it even gets that far. It's not a murder investigation if there's no body and no evidence.
