Garfield Kart discriminates against Italians because it appropriates the Italian tradition of racing go karts on mushrooms and repackages it into a much more marketable non-Italian format. People who would have been put off by a greasy wop telling them, "Let's-a go!" can now enjoy kart racing without their hatred of Italian culture getting in the way. The removal of unfavorable ethnic groups basically makes that game Hitler, and you're also Hitler for playing it.
