Griefing is very rare to see in modern Minecraft because quite a lot of servers have made it impossible to destroy anyone else's stuff. Its kind of sad since its pretty fun in my opinion, but a lot of people just get frustrated with the fact griefers can destroy things that may of taken hours upon hours to complete and face no consequences.
Modern Minecraft griefing is all about social engineering, tbh. The most destructive methods nowadays are crashing servers with lag machines and duping items to destroy the economy but server owners patch those exploits rather quickly.
Unless you find a vanilla server or an anarchy one you can't really destroy shit as it will be rolled back by jannies on the spot.
Me and a few friends have had fun exploiting hacks for Bedrock since that version's way less protected due to all the console players, flyhacks and autokill turn bedwars into fun with chatbox rage.
